Wedding Cakes

Come and make a wedding cake! It isn’t as difficult as you might think, especially if you can learn from an experienced wedding cake pastry chef. Your instructor (and also your innkeeper) owned and operated a wholesale dessert company in the Boston area for 18 years and has made many wedding cakes.

You will learn the tips and tricks of baking and assembling the cake as well as the decoration. We will make a 3-tier cake with a different filling in each tier. Then we will decorate the tiers in different styles for the sake of practice and stack the tiers. Finally we will finish the top and base.

Techniques in this session will include:

  • Proper baking technique for large layers
  • Making Italian meringue buttercream
  • Dark and white chocolate mousse
  • Lemon curd to make into lemon filling
  • Basic pastry bag techniques
  • Simple piped flowers

The weekend includes:

  • Late light supper Friday evening when you arrive along with dessert and coffee
  • Friday and Saturday nights’ lodging in spacious rooms with private bath
  • Full country breakfasts on Saturday and Sunday
  • Sit-down Saturday night dinner with appetizer, salad, main course, and dessert (alcohol is BYO)
  • Saturday afternoon cooking session and all materials; the class recipes
  • Time to explore Brandon’s shops and galleries
